Living grain free can be hard, especially this time of year. The shops and Christmas markets are full of so called “treats”, containing a lot of things that might not really be a treat for our bodies.
Staying away from all of that is easier if you give yourself some great healthy alternatives that will still get your Christmas mood going. We always have a tin of home made muesli in the cupboard, and this time of year I spice it to taste all Christmassy. Pairing it with some natural yogurt and possibly some fresh fruit or berries, we’ll have some for breakfast every now and then, and my kids like to eat it as an afternoon snack.
This is how you do it:
In a big bowl, mix seeds, nuts, dried fruit and shredded coconut – a big scoop of each, using what you have at home. This was the mix I made today:
- 125 ml / ½ cup shredded coconut
- Nuts: almond slices, chopped walnuts and chopped hazelnuts – 125 ml / ½ cup each
- Seeds: sunflower seeds, slightly ground linseeds and chopped pumpkin seeds – 125 ml / ½ cup each
- Dried fruit: goji berries and apple slices cut into pieces – 125 ml / ½ cup each
No worries – you don’t need everything – so be flexible and go with what you have at hand.
Mix the dry ingredients and then in a separate little bowl or glass mix
- about 100 ml / 0.4 cup warm water
- 2 tbsp’s honey,
- a pinch of salt
- about a tbsp. or two (depending on the total amount of nuts and seeds you used) of Christmas spice.
Christmas spice is a mixture of the spices we often use for baking at this time of the year. I have a recipe for it here – but otherwise you can substitute it with just cinnamon, if you don’t feel like the extra work.
Mix with a spoon and then add it to the nuts and seeds and stir until everything is blended.
Spread on a baking tray and put in the oven. Turn the oven on to 140 C (280 F) and set a timer for 20 minutes. Once the 20 minutes are up – turn the oven off but leave the muesli inside. Just open the oven door a bit by sticking a wooden spoon or a rolled up tea towel in the gap. Let it cool down completely before you take the muesli out.
Filling a little cellophane bag and tying a ribbon around also makes a great Christmas gift!
