Zucchini. Looks like a cucumber, tastes almost nothing and goes from kind of dry as raw state to extremely watery when cooked. I have to admit, it was never one of my favorite vegetables – until recently!
I bought a spiral slicer from Naturata and started making raw salads with different tasty dressings based on those zucchinis. Now I love zucchini and recently even used one to bake the most amazing moist and creamy chocolate cake.

And here is a simple raw zucchini salad for you to try out.
As a side dish, for the four of us, I make a salad of 2 medium sized zucchinis.
Start by spiral slicing the zucchinis
Make a dressing of:
- The juice and zest of one organic lemon
- 2 tbsp. olive oil
- Mustard to taste – about 1 tbsp.
- ¼ teaspoon salt
Pour dressing over zucchini and mix well. Top with chopped fresh lemon balm if you have, and grated parmesan cheese if you are not vegan.
