Sushi artists at work – captured by Clew photographer Lisbeth. Or…

“I’m not making art, I’m making sushi.” – Masaharu Morimoto (the Iron Chef)

“In Japanese sushi restaurants, a lot of sushi chefs talk too much.” -Masa Takayama (owner of 3 star Michelin restaurant Masa in Manhattan)

“Kids are now eating things like edamame and sushi. I didn’t know what shiitake mushrooms were when I was 10 – most kids today do.” – Emeril Lagasse (celebrity chef)

“I’ve sat in sushi bars, really fine ones, and I know how hard this guy worked, how proud he is. I know you don’t need sauce. I know he doesn’t even want you to pour sauce. And I’ve seen customers come in and do that, and I’ve seen him, as stoic as as he tries to remain, I’ve seen him die a little inside.” – Anthony Bourdain (author and celebrity chef)

When photographing Monsieur Goto and his tiny sushi team in their tiny sushi kitchen at Takajo in Luxembourg City, Luxembourg, our photographer tried hard to make herself and her camera as invisible as possible, not to be in the way. There’s a lot of action in such a kitchen! Mister Goto has been making sushi for decades –  almost three of them in Luxembourg, and before that in Tokyo – it’s in his fingertips!

-Do you want me to move more slowly so you have time to take your pictures? – Monsieur Goto
